Delicious Bengali Masala Chicken--what and how?

As I am writing about this one, I feel hungry even though right now my stomach is quite full! Such tasty this dish is. So try this recipe sometimes at home.

Ingredients:
1. Fresh chicken cut into pieces and washed: 500 gms (for 3 persons)
2. Onions: 5 medium sized, peeled and washed.
3. Garlic: 12-15 cloves of garlic
4. Ginger: One small cube of ginger (approximately 1.5cm x1.5cm x1.5cm)
5. Whole cumin: Half a teaspoon
6. Coriander powder: 1/4 teaspoon
7. 1/2 a piece cardamom with seeds and one small piece of (1 cm x 1cm) cinnamon either grounded or pasted.
8. 150 ml mustard oil (for Bengali masala chicken mustard oil is a must).
9. One tomato, 2 dry red chilies
10. Take some green chilies according to your taste.
11. One big potato peeled and cut into 4 pieces.
12. One tablespoon fresh curd.

Process:
First of all grind together the 4 onions, one tomato, coriander, cumin, red and green chilies. Take the chicken in a bowl and put the grounded masala into it. Now add to it the garlic cloves, 1 teaspoon salt, about 50 ml mustard oil and the curd. Properly mix all this ingredients with the chicken and keep aside the mixture for one hour.
After one hour put oil in a deep frying pan and fry the potato pieces. Once they are golden brown, remove them and keep aside. Now add the remaining oil into the pan, add one chopped onion into it and stir fry till golden brown. After that add the masala chicken mixture that your prepared in the previous step. Keep cooking by steering slowly. You will see that chicken pieces are releasing water. Keep cooking until almost all water is gone and the chicken is almost cooked. But be careful not to burn the thing. Now you can feel the flavor coming out of the chicken. Now add to it some additional amount of hot water (the amount of additional water will depend on how thick or thin you want your gravy). When the water starts boiling again, cover the pan and heat very slowly. Slow heating is very important for a tasty chicken. After about 12-15 minuets of very slow heating the chicken should be done. If not you may need to heat for some more time. Now open the cover and add the cinnamon and cardamom paste or powder and mix well. And your tasty chicken is done. It can be served in traditional bengali style with basmati rice. Enjoy!

Life and the dreams - why and what?

"Aamar swapne dekha rajkanye thake, saat saagar ar tero nadir pare. Mayurpankhi bhiriye diye aami dekhe elam tare."

Well, this is an excerpt from a famous bengali song sung by Shyamal Mitra. It says " The princess of my dream dwells at the other end of the seven seas and thirteen rivers. I anchored my peacock shaped decorated boat there and met her." Yes indeed, we are all on our respective voyages to meet the dreams of our life, but it so happens that only some of us succeed, whilst others simply sink without a trace. And there are some others who succeed late. The trouble is that the dream itself is not always clear, let alone the path to reach it. And this is what life is - a treacherous, seemingly aimless voyage through thick veil of grey mist where we can't foresee what is in store for us. There can be a giant whirlpool waiting to gulp us down to death or a fierce cyclone waiting to throw us so high in the sky that there is no coming back or a giant iceberg to turn us into peices. But yet, at every moment we seem to be deeply engrossed in the nitty-gritty of our journey, completely oblivious to the fact that we may breath our last the very next moment. This is life - to continue to think about all the positive and warm things standing in a cold and damp graveyard amidst a thousands dead bodies, to continue to relish all the sweet memories and happenings while getting entangled in the cobweb of death and sorrow. Let me share, in this regard, a nice metaphorical story I once read many years back.
A man was being chased by a fierce blood-thirsty tiger. He was trying very hard to dodge it. But eventually, on his quest to escape, he reached the end of a cliff. There the hapless man was left with only two options - either wait for the tiger to come and kill him or jump from the cliff into the gorge. As the later option seemed better poised for surviving, he decided to jump and while falling he saw a bunch of twigs and tendrils of grapes hanging from the cliff. He caught hold of them and got momentary relief. Because soon he realized that a mice was trying to cut the bunch. The man was terrified to the extreme. However, when he saw a cluster of ripe grapes hanging from the twigs, he could not resist but pluck the grapes and relish them. That is life.
And according to the philosophy of Vedanta, this all is a big dream, formally known as Maya. The fatal attraction to life, in spite of knowing that it is nothing but a sea of death and sorrow, that all things sweet and warm are always followed by things sour and cold, that the ultimate predictable future of all beautiful as well as ugly creations is death and destruction, is the manifestation of Maya. Alluring dreams are prevailing our minds and they are responsible for this mess called life.
Let me finish off with the prayer - let us do not get tempted by these alluring dreams, and that let truth be bestowed upon our life.

What is Vedanta philosophy -- a brief note

Well, let us talk about one of oldest philosophy in the world - the philosophy of the Vedanta. It is also refereed to as the Hindu philosophy. The name 'Hindu' was given by people who were drawn from the rest of the world to ancient India for its various treasures. Vedanta literally means "Veda + antah" i.e. the conclusion of the Vedas. There is not a single starting point of Vedanta philosophy. Its the work of thousands of men over hundreds of year. It has undergone great deal of evolution after its inception somewhere in 1500 BC (there are controversy about this date) to reach its present and most elegant form. Vedanta had been considered in India the purest of all thoughts that can lead man to salvation or to the true realisation of the self. We will be saving the discussions about the history of the Vedas and Vedanta for a latter post. Let us now focus on the key points of the Vedanta.

The main theme of Vedanta philosophy is self realisation. If you sit quietly for a few minuets and concentrate on the fact who you are, you will get confused! You will feel that you are a combo of body and mind! You will feel that you are nothing but a very complex structure of flesh, blood, bones, skin, mucus and a subtle something called the mind. However, all of these entities are ever changing, and you still feel that the 'you' who used to bunk classes in childhood and the 'you' who used to argue with your boss in your prime, are the same. Have you ever wondered why this happens? Well, scientists will tell you that some very complex structure of proteins, called the memory, does the trick. But think twice! You do not have the memories of the moment you were born, or memories of your early days of life, but that does not mean that you were not there at that time. You can find the feelings of mine-ness (self-ego) even in a toddler. So, something must be there deep within us that never changes. That is our true self, Atman (our soul), as the great sages say! Ohk ..ohk..I know its very difficult to digest this 'soul' thing as we only realise that there is something fishy called soul when we watch horror movies! And they seem to be very nasty objects! But consider another example. We have five sense organs and lets assume that we are in a fish market of Kolkata buying some mouth watering hilsa and prawns. If you have ever visited a fish market in Kolkata you will know what I mean. For those who have not-these markets are hell of a noisy having all kinds of bad odours mixed with the flavours coming from numerous varieties of fresh fishes. Your all five sense organs are detecting all different noisy signals and yet in that chaos you can purchase your favourite fish and come home to enjoy it. Have you ever wondered how we complete this task? Man, your are doing the extremely difficult job of separating the different signals and then correlating them instantaneously with each other to form a complete perception of reality. And how we do it? For this to happen there has to be a all prevailing coherence inside the brain or inside us that binds the different parts together just like a thread in a garland. This coherent part is considered as the 'Atman' in Vedanta philosophy. Atman is never changing. Its everlasting constant. It can be compared with the screen in a theatre, which never changes, but on which the projections of everything else makes the complete picture or the movie.


But then the question that automatically comes is "why we don feel our true self?". Dear, this is because of Maya! Maya is something that prohibits us from seeing the true reality. Simply put Maya is nothing but ignorance! Let us try to understand how! Consider a spoon full of common salt. We know it as some white crystalline stuff that taste salty. This is Maya! But is that all? Is only that the true reality of common salt. Anybody who have had basic lesson of chemistry will know that common salt is nothing but the combination of sodium and chlorine atoms. People having higher level of knowledge will know more that salt is made of nothing but electrons, protons and neutrons. Scientists having even higher level of knowledge will know that there are only quarks and leptons and empty space in salt. And string theorists who are considered to have the highest level of knowledge in modern physics will tell you that there are only strings of energy in salt and nothing else. Ancient Hindu sages will say common salt is nothing but Brahma (the universal consciousness or God!). So you see the veil of Maya is gradually lifted up by the light of knowledge. The entire universe is defined within Maya! Our body, our mind, our surroundings and everything else that we feel with our sense organs are solely defined within Maya. The concept of Maya is very important in Vedanta Philosophy. Maya makes us feel that we eat, we laugh, we play, we die etc. But when we gain the ultimate knowledge, the veil of Maya is torn, and we wake up from the dream that we are currently in. We realise that the common salt is no different from us, and we are no different from god! In Vedanta its said like "I am everything (aham brahmmashmi)"! Here you must note that as long as we see the dream, the dream is real for us. As long as we are in Maya, it is real for us.

So, what happens when we are enlightened by the ultimate knowledge? Unfortunately Vedanta saya it is "Abanmansagochora", something that our mind can not perceive, something that cant be described in language. It is something that cant be understood, it has to be realised. No one can tell what it is like. There is a small metaphor regarding this. Once a small cube of salt decided to describe how sea water feels like. So he went down into the sea to taste it. But as you can understand, the moment he descended into the water he completely melted away. So he was no more in a position to describe how sea water feels like to his fellow friends. And its the same with us. The moment we achieve self realisation we get mingled with the universal consciousness called the Brahma in Vedanta. Dear, we and our father(God) are same.

Ok, so how do we achieve self realisation? Vedanta has given us clear indication about that also. These ways of self realisations are called Yoga. Yoga means connection - connection between our Atman and Brahma. The form of Yoga popularised by modern day Gurus are just the initial part of this true yoga which is useful to make our bodies strong and pure.
There are various yogas - karma-yoga, bhakti-yoga, gyana-yoga. We have to use any one or any combination of these to achieve self realisation. Karma-yoga tells us to do our everyday karma or work as duties to God. We should not do work expecting for the result. We should completely denounce the expectation of the outcome of our karma. Bhakti-yoga tells us to completely surrender ourselves to God. Complete dependence on God is the key point in Bhakti-yoga. And gyana-yoga is self realisation through the practice of knowledge that this whole universe is Maya.
The ultimate aim of our life, according to Vedanta, is self realisation. Unless we realise ourselves we will be going again and again through the cycle of life and death. Once we gain the ultimate knowledge we will be immortal. I conclude this page with the prayer from Brihadaranyak Upanishad --
"asata maa sadgamaya, tamasa maa jyotirgamaya, mrityurma amritamgamay."
"Oh god, please take us from ignorance to the path of knowledge, from falsehood to truthfulness, from mortality to immortality".

How to easily controll anger?

Friends you all know how it feels when we are angry. Most of the time we do something wrong or take some wrong decisions under the influence of the devil called anger. Although sometimes we get the opportunity to correct our mistakes afterwards, most of the time we are left with nothing but lamenting. Many times we wish if we could control ourselves a bit more! This little bit of additional control might save many relationships, many jobs, many marriages and many wars. Since ancient times anger has been one of the key ingredients behind many destructions. But it is not necessarily meant to be that way. Anger can be controlled with little bit of practice. The more you practice, the calmer you become. Here I will tell you about a very simple way to control the adrenalin rush that gives rise to the changes in your body and mind called anger.

The first thing to do is to realize that you are angry. Its actually very easy. Most us can do it automatically. For those who does not realize that they are angry, look for the symptoms like -- your heart is beating faster, you are sweating, you are feeling like slapping somebody, feeling like shouting, feeling bad things about somebody or pointing your finger to blame someone. You will feel a very sudden adrenalin surge in your body. The most common feeling that arises when you are angry is the wish to hurt someone either emotionally or physically. So look for these symptoms and you will know that you are angry.

Now that you have realized that you are angry, just lower your head down towards the ground; take deep breath and look at the ground. Do not look at the object that made you angry at any cost. Just think about the ground. That is sure to cool you down. Ground always have zero potential and it will take all the excitations from you to return you to the ground state i.e. the normal state. Trust me, it helps. I have tried it myself. And for Godś sake do not ever take a decision when you are angry. Just wait a bit more. Think of anger as a devil who is trying to posses us. We have to fight against it to have a better life. So three cheers for a anger free long and happy life!

[N.B.-For those who cant control their palms, fists or legs when they are angry, there is an easy target -- the ground; you can hit the ground and it will automatically take all your anger and also suck all your dark energy that anger provides you with! ;)]

How to format usb disk when windows shows ¨unable to format message¨?

Sometimes in windows you may face that when you try to format an usb disk by right clicking on it and choosing the format option, windows displays ¨Unable to format¨ message. In such a case there is an alternative way to format your disk. Please follow these steps to get it done:
1. Gor to Start->Run
2. Type ´cmd´ and press enter.
3. The windows command prompt will open.
4. Type ¨FORMAT H:\¨. Exclude the quote sign and replace ¨H¨ by the drive letter of your usb drive and press ¨Enter¨. Be careful at this step not to give a wrong drive letter. Otherwise it will format that drive.
5. Now follow the instructions that the command prompt shows you. It may ask you to provide a name for the drive. In such case just enter any name of your choice and press enter.
6. congrats. Your drive is successfully formated.

How to open pen drive that shows the message ¨Access denied¨ when you try to open it?

Dear all probably sometimes you see that when you try to open your usb drive by double clicking it or by right clicking and choosing explore or open, it does not open. Instead it shows ¨Access denied¨ or ¨Permission denied¨ message. In such a case there is an way to access your drive. Just type in the drive letter followed by a colon on the explorer address bar. For example if the drive letter for your usb drive is ¨H:¨, type in the address bar of the explorer (where addresses are displayed) ¨H:¨ (sans the quote sign, of-course) and press enter. This way you can access not only your pen drive, but also any other drive that is inaccessible while double clicking. Enjoy!

Dear friends, streaming music is a kind of music that you can just listen in your PC as it arrives over the INTERNET but cant save or download it. It is constantly received and presented to the listener in real time. Most of the internet radio station telecast in this fashion.

How to save pictures from webpages that prevents right click and save picture options?

Dear friends, here is a simple trick to save images from web pages that do not allow right click or ´save image as´ options. Just follow these simple steps:
1. open the page containing the image in any browser of your choice.
2. press the print screen key i.e. ´PrtSc´ key in your keyboard.
3. Open any image editing program of your liking. For example you can use ´paint´ in windows, or photoshop or gimp etc.
4. Open a new file in that image editing program.
5. Go to Edit->Paste. And this will paste whatever was on the screen when you pressed ´PrtSc´ key.
6. Crop the required part of the image and paste it in a new file and save.
7. Thats it. Enjoy saving images for your viewing pleasure.

How to save youtube videos withou using any specialized software or external sites?

Dear readers, here is a very simple approach to saving youtube videos without using any software or any external sites. The technique is to use Internet Explorer (any version will do). Just follow the following steps:

1. Let the video fully load in your browser.
2. Open the ¨internet option¨ dialog box in the tools tab of Internet Explorer. Go to Tools->Internet Options->General
3. click on settings in the browsing history area.
4. A new dialog box will open. In that box click ´View Files´
5. The ´temporary internet file´ window will open.
6. Arrange the files their according to decreasing size.
7. Look for some file named something like ´get_video**´ of appropriate size. Generally the video files are in MB sizes or thousand kBs.
8. Copy the file to some convenient loaction in your hard drive.
9. Play the file with ´vlc´ media player. If you do not have vlc, the link to download it is http://www.videolan.org/vlc/ .
10. Rename the file according to your preference. The file will most likely be in .flv format although sometimes you can get .mpg also.
